I started collecting wines seriously in 2012 and I’m interested in finding out the reality behind many things people believe about wine: that it ages, that it breathes, that it must be stored in a certain way. My wines are stored in a temperature-controlled storage room in my backyard called the treehouse (because, um, the kids’ tree house used to be there), with a capacity of about 2,000 bottles. The wine is stored in rectangular bins stacked two deep. I have a refrigeration unit that keeps the wines at a constant temperature of about 60º Farenheit and the humidity is around 60%. There are two systems to monitor the temperature which send alarms if the temperature gets out of range. I write notes on CellarTracker (user name wgmcallum).
